How alanine catalyzes melanoidin formation and dehydration during synthesis from glucose

Abstract The chemical composition of melanoidins formed from glucose (Glc) and alanine (Ala) in different molar ratios was investigated using UV/Vis, FTIR, EPR spectroscopy elemental analysis (EA). Melanoidin samples were prepared at varying Glc Ala ranging 10:1 to 1:10 (Glc:Ala). Reaction systems containing a higher ratio show melanoidin yields UV/Vis absorbance. This indicates that an excess facilitates the formation larger π -electron catalyzes formation. showed more radicals enriched samples. EA data suggest during amounts amino acid support dehydration reaction products. On basis our data, we postulate structures products intermediates for Glc/Ala ratios. PCA FTIR spectra allows separate indicating their molecular compositions.
